Bertemu lagi sekali kita didapur Adi nang, well.. walaupun banyak perkara yang terjadi di belog ohsem ni, tapi kami masih setia mengupdate resipi resipi, insyaallah. nampak gayanya angan angan kami untuk mengupdate resepi setiap hari dah menampakkan jalan buntu, tapi kami tetap dengan semangat untuk berkongsi resepi melalui belog ni. dalam masa dua minggu ni, kami dikejutkan dengan pengunduran Subhi Karim daripada geng ohsemwok ini disebabkan oleh sebab sebab tertentu, terutamanya tuntutan kerja, tapi beliau masih bersama Ohsemwok sebagai penyumbang resepi untuk belog ini secara sambilan.<br />

Dalam masa yang sama juga, tempat beliau telah digantikan dengan Fariz Muhazir, Fariz jugak merupakan seorang photographer dan hebat sangat masakannya serta handsome tapi dah tak available, yang available saya sorang jer. hahahaha... Apepon matlamat kami disini hanya untuk share resepi di belog ini. yang penting kita enjoyyyy!!! ;-)<br />

Sebuah Resepi tradisi yang adi dapat daripada Arwah emak adi sendiri, Rosminah Sulaiman <b><i> (AL-FATIHAH)</i></b>. semoga sesiapa yang sukakan resepi ini, pahalanya diperoleh oleh Arwah emak adi, saya hanya meyumbangkan resepi yang Arwah emak ajarkan pada saya...<br />

Dulu masa kecik kecik, kalau nak makan ayam golek or ayam panggang, ini jer lah yang akan disediakan oleh emak adi. memang takda cara lain. rempah ratus dan bahan bahannya adalah sama. tak kira lah dibakar melalui oven kotak hitam cap bunga raya (yang tenggek kat atas dapur gas) tu ataupun dibakar secara open air ( bakar bawah pokok guna unggun api ), resepi keluarga kami punya ayam golek tetap sama.<br />

<b>Bahan bahan untuk Marinade</b><br />

<li>bawang merah ( 5 biji)</li>

<li>serai ( 2 batang)</li>
<li>Halia ( dalam seinci)</li>
<li>kunyit hidup or serbuk</li>
<li>gula perang</li>
<li>gula biasa</li>
<li>sedikit garam</li>
<li>MSG sedikit</li>
<li>madu asli sedikit</li>
<li>rempah campuran ( ketumbar/ jintan manis / jintan putih) disangan dengan api yang kecil sehingga ringan dan dikisar, guna dalam 2 sudu makan.</li>
<li>kentang ( di wedges or potong dadu sumbat dalam perut ayam). kalau nak sumbat udang pon best jugak.</li>

<b>Cara cara penyediaan.</b></div>

<li>Semua bahan bahan tadi dimasukkan kedalam pengisar dan kisar halus. kecuali ayam dan kentang, kalau ayam tu korang kisar habislah cerita ayam golek kita ni... takda harapan lah.. jadilah ayam kisar panggang nanti.. hahaha... harus bijak dalam memasak, jangan jadi lurus bendul ;p</li>
<li>Dah kisar semua bahan rempah tadi kita perap ayam selama sekurang kurangnya 4 jam, nak lagi sedap, marinade malam dan kita bakar tengahhari besoknya, simpan dalam fridge dan pastikan ianya bertutup, supaya tidak berbau rempah fridge anda nanti....</li>
<li>Boleh dibakar melalui oven or digolek golek menggunakan unggun api (cara Hang Tuah) tapi saya memilih untuk dibakar melalui oven jer sebab mudah dan saya boleh layan cerita Tamil kat Astro Tangathirai 951. </li>
<li>masak didalam oven selama 1 jam (450 degree ) or sampai dia masak, sambil sambil tu boleh bukak oven dan sapukan lebihan rempah yang dicampur dengan minyak keatas ayam.. dan bakar semula.</li>
<li>siap dan sedia untuk dihidang...</li>

<li>Kemudian, masukkan kunyit serbuk untuk dapatkan colour menarik (jangan banyak sangat)</li>
<li>Garam jangan lupe masukkan, sesedap rasa</li>

<li>Kemudian keluarkan ayam selepas 30minit dan keluarkan minyak yang ada + terbalikkan ayam</li>
<li>Masak selama 30minit lagi (selepas tu ulang cara di atas)</li>

Bring the water and boiled. Add potato. Add salt to the boiled water. Cook potato around 8/10 minutes (of 3/4 cooked). Don't over cook. Separate it.</div>

Heat olive oil in a large size pan. Add in potato and seasoning - rosemary & dried parsley. Add salt to taste. Cook for another 5 minutes. <b>Tips:</b> You can add in gravy from your baked chicken and mix with the potato.
I'm sure there' ll be a lot of juices/gravy from the chicken left on the roasting pan, so don't waste it! </div>

Kemudian, masukkan ayam yg dah masak tadi kedalam gorengan mentega tadi... sambung gorengan anda... kemudian masukkan kuning telur dan kacau laju2 bagi dia hancur... pastu gaul2 mereka semua sampai sebati...<br />
Then, tos kan minyak mentega tadi.. guna laa penapis besi besar ye... amik ayam ngan isi2 telur hancur tadi saja... daun kari yg garing tu pun sedap gak.. amik skali k...<br />

Here we go for the recipe.. kali ni nak menaip jer lah.. malals nak tulis step by step. haha.. orait sila baca dan catit resepi yeh.. mula mula kita perlukan..<br />

<b><u>Bahan bahan :</u></b><br />

- Spagetty<br />
- Tomato<br />
- garlic (dua ulas)<br />
- minced beef (sedikit)<br />
- Cream or susu sejat marigold ( dalam 5 sudu )<br />
- oyster sause ( 1 sudu)<br />
- Meatball readymade ( Ramly)<br />
- Fresh parsley untuk hiasan.<br />

Kemudian, ambik spagetty, buat macam biasa, rebus.. gila ko spegetty nak goreng.. mestilah rebus. jangan terlalu overcook sebab hilang kekenyalan spegetty tu nanti dah tak sedap. masukkan sedikit garam semasa merebus. dah siap toskan letak kat tepi.<br />

Mulakan kisah baru dengan memanaskan kuali dengan sedikit olive oil, tumis garlic cincang tadi.. dah sedap aroma, masukkan daging cincang tadi. saya gunakan brand encik ramly jer. then masukkan juga meatball dalam 3-4 biji..<br />

dah agak agak hampir masak tu, tuangkan sedikir cream, oyster sause dan tomato ceri. tomato kita masukkan sebelum masukkan spegetty sebab taknak terlalu masak. so last but not least... spegetty. kacau dan seasoningkan dengan salt & pepper.<br />

Done. dan taburkan fresh parsley (finely chopped) diatas spagetty tadi.<br />

In a medium bowl, pour olive oil to the chicken. Mix it well and even. Add in thyme, black pepper, lemon juice (squeeze half or sebiji pun boleh). Add in lil bit vinegar and salt. Mix it even. You can actually taste the marinade to make sure the flavor from the
herbs, lemon, salt bla bla bla are just enough. Nice and not to salty and enough 'masam' yang best. Marinade in the fridge at least minimum of 30 minutes. If I prepare this menu for dinner, I will marinade in the afternoon at 5pm (I will start baking around 8pm) I want the herbs and lemon to marinade well with the chicken :) <br />

<b>Baking.</b><br />

Pre-heat oven to 180 degree. Here I'm using medium size roasting pan and I simply put the whole chicken and all the juices and herbs into the roasting pan and start baking. Also advisable to use aluminium foil to cover the pan. It takes about 30 to 40 minutes for the chicken to be well cooked and browned sufficiently.<br />

Add in mussels, cook for 5/6 minute. Add in cooking cream (half cup). Add in full cream milk (half cup). Cook for another 2 minute. Add in seasoning - parsley (a teaspoon), ginger (1/2 teaspoon), lil bit of black pepper. You may add salt (secubit cukup). Cook for another 2/3 minute.</div>

Nak buat sos supreme pulak (ok lupa nak snap gambar..), senang je.. panaskan sikit minyak dalam kuali.. kemudian goreng bawang putih dan bawang merah hingga naik bau... pastu masukkan pati ayam pekat, sos tiram, sos cili, sos tomato, hirisan cili dan cendawan tiram... masukkan sikit air... masak lebih kurang 3-4 minit...<br />
Pastu bancuh tepung jagung tadi dgn air sejuk... agak2 setengah cawan je.. then tuang kedalam sos tadi... masak 3-4 minit lagik... siap. padam api.<br />

today is recipe from jawa.. lets talk jawa. hahahaha.. Masak Lele Kencur ni adalah masakan tradisi family adi. Dalam Bahasa Melayu nya kita boleh sebut, ikan keli masak lemak cekur. Haa.. senang sikit nak faham kan? Kaedah memasaknya lebih kurang macam masak lemak cili api tapi dalam resepi ni kita tak guna langsung kunyit, tapi kita tukarkan kepada cekur. tau tak apa itu cekur? or kencur? well.. benda yang sama jer.. biasanya cekur digunakan dalam membuat kuah pecal. Aroma cekur ni memang lah sangat marvelous. silap haribulan memang boleh terlioq.</div>

<span style="color: #bf9000;"><b>Step 03</b></span> - masukkan semua bahan bahan tadi kecuali santan, serai dan ikan keli dalam lesung batu. dan kita tumbuk semua bahan tersebut sehingga lumat. Masa ni kalau korang rasa menyampah dengan seseorang, opismate ke, bekas kekasih ke, bekas kek ke, or husband anda sendiri ke or nenek tiri jiran anda ke.. time ni lah gunakan kesempatan. anggap sahaja muka orang yg anda menyampah tu didalam lesung batu tu.. tumbuk tumbuk dia sehingga lumat.<br />

Haa.. rasa lega sikit kan? tu lah pasal.. memasak ni pon boleh menghilangkan stress tau. ok, tumbuk jer, jangan memain. ;-) jangan lupa remove kulit cekur tu dulu sebelum guna.. ok, satu tips berguna, lagi tua cekur tu lagi sedap lah aroma masakan ni.<br />

<span style="color: #bf9000;"><b>Step 04</b></span> - Masukkan bahan hasil tumbukan kungpow anda or tumbukan padu maut anda kedalam periuk masakan. masukkan semuanya, lesung batu jangan dimasukkan sekali.. biarkan ianya diluar periuk, pegi basuh jer.. then masukkan santan.<br />

Dan masa ni boleh jugak masukkan sebatang serai yang diketuk kedalam masakan. dah lah menumbuk tadi kan? ni pulak ketuk.. adoiii.. memang hilang stress lah memasak menu ni. ;-) Soo.. jgn emosi emosi lagi yeh kaknon kaknon and diknonss semua. teruskan je memasak.<br />

And, last but not least.. masukkan hirisan daun cekur kedalam masakan daun daun yg muda yeh, ambik part pucuk cekur tu bagus, kalau takda pon takpa, hukumnya hanya sunat sahaja, bukan wajib...<br />

Ok here are the ingredients & steps : <br />
1. Eggs<br />
2. Cheese<br />
3. Black pepper<br />
4. Butter<br />
5. Cherry tomatoes<br />

Firstly, beat the eggs. Add in black pepper into the eggs. On a medium heat pan, put in butter till melt, then pour the eggs. Add in cheese. Scramble the eggs until it mix well. DON’T over cooked it. Done! Garnish the scrambled eggs with sliced tomatoes.. Serve!<br />

Tips: I add in sausage and cheese to the whole dish. You can have it white bread too if you like..and coffee for a nice breakfast!<br />

- Rebus spagetti. Toskan airnya.<br />
- Kemudian gaulkan olive oil, daging yg dah dimasak tadi, mixed herb, tomato cerry, serbuk lada hitam, dan garam secukup rasa, bersama-sama spagetti.<br />
- Siap dan hidangkan panas-panas.<br />

Actually plan nak memasak Macaroni jer untuk hari ni, tiba tiba terilham idea untuk olah resepi kali ni dengan teknik membakar didalam oven. Mudah dan tak pening kepala. Dapur pon kurang bersepah.<br />

Untuk menu Adi kali ni agak mudah jugak kalau korang nak cuba. kita guna teknik Boiling-Fry-Bake jer. - Bawang Besar 1 biji ( dicincang halus)<br />
- Bawang Putih 4 biji ( diketuk jer) nak cincang pon tak salah..<br />
- Minced beef ( daging lembu kisar)<br />
- Fresh Parsley<br />
- 2 biji Telur<br />
- Whipping Cream<br />
- Tomato Cherry<br />
- Makaroni<br />
- Olive oil utk menumis<br />
- salt & pepper to taste.<br />
- Cheddar Cheese<br />

<b><span style="color: #bf9000;">STEP 02</span> - </b> Rebus Makaroni korang sehingga masak. masukkan sedikit garam dalam air rebusan. remember.. Dont over cook. tak sedap nanti texture makaroni tu. kita nak bakar dia nanti, bukan nak buat bubur makaroni yeh. harap maklum. dah masak, Toskan dan teruskan ke langkah seterusnya.<br />

<b><span style="color: #bf9000;">STEP 03</span></b> - Panaskan kuali dengan suhu sederhana dengan Olive oil utk menumis (agak agak boleh menumis dah lah.. jgn byk sangat) , masukkan bawang besar yg dicincang berserta dengan bawang putih tadi.. tumis sehingga harum semerbak bau bawang tu, kemudian masukkan daging kisar dan goreng sehingga daging separuh masak. seasoningkan ramuan tersebut ikot tekak korang. pandai pandai lah nak bagi sedap, ni base dia. saya gunakan salt & pepper jer and sedikit pati ayam. kemudian toskan dan asingkan bahan tersebut didalam <b><i>Al Magku kuk Wal Hayyun.</i></b><br />

<b><span style="color: #bf9000;">STEP 04</span></b> - Bahan yang ditumis tersebut dicampur degan Makaroni korang tadi dan dicampurkan juga dengan fresh parsley. cincang lah parsley tu terlebih dulu yeh.. tercekik kang suami korang makan. sila rujuk gambarajah diatas. ( campuran tumisan daging+ Parsley + Makaroni )<br />
<i>PASTIKAN TIADA LEBIHAN AIR DIDALAM ADUNAN. sebab kita nak ianya kering. sebab tu toskan betol betol.</i><br />

<b><span style="color: #bf9000;">STEP 05</span> </b>- Masukkan adunan tersebut didalam Mangkuk pembakar. pilih yang bersesuaian yeh. saya punya mangkuk IKEA jer. yang tahan suhu panas oven.<br />

Dalam masa yang sama prepare di mangkuk lain.. Pecahkan 2 biji telur, pukul slow slow guna garfu (itu pon nak kena ajar ke?) hahaha.. kemudian campurkan telur tersebut dengan wipping cream. kacau bagi sebati. Tomato Cherry potong dua dan susun seperti gambarajah dibawah.<br />

Kemudian Tuangkan bancuhan telur dan wiping cream tersebut kedalam adunan yang akan dibakar itu.. Almost Done.<br />

<b><span style="color: #bf9000;">STEP 06</span></b> - Nanti dulu.. belom siap lagi.. sebelum dimasukkan kedalam Ketuhar, Taburkan Cheddar cheese parut diatas sebagai topping terakhir. dan rajinkan diri anda untuk tabur sedikit salt & pepper diatas cheese tersebut. sikit je. untuk texture.<br />

Serve when it still hot. untuk hiasan taburkan sedikit finely chopped parsley diatas Sofea Jane tersebut. siap dah.. Mudah kan?<br />

- Udang di kupas kulit dan dipancung kepala<br />
- daun bawang di cincang2<br />
- bawang merah di cincang2 atau di kisar halus pun boleh.. lagi layan..<br />
- telur ayam sebiji cukup dah kalau nak makan 2 org... kalau nak makan 100 org.. maka tambah la lagi..<br />
- tepung gandum adalah mesti! kalau takde nak jadi cucur celah mane kan..?<br />
- garam secukupnya<br />
- cili merah/padi dicincang... ini kalau korang nak rasa pedas2 menyala dalam kepala...<br />
- air secukupnya<br />

Cara nak masak<br />

- Gaulkan tepung, bawang, daun bawang, telur dan air secukupnya hingga tak terlalu pekat dan tak terlalu cair... tips nya, bila dah sebati, korang ceduk dgn sudu pastu angkat dan tuang balik pada ketinggian sejengkal.. tgk doh sebatian tadi jatuh cemana.. kalau dia jatuh seketul macam meteroit tu.. haa ok la tu... kalau jatuh betali-arus memanjang... so sila tambah tepung sket bagi dia kental...<br />

- pastu baru masuk udang dan cili (kalau nak)... gaul dan gaul... masukkan garam plak...<br />

- ok then panaskan minyak pada suhu... ntah.. dapur aku takde sukat suhu.. -_-"<br />

- goreng la cucur anda hingga kekuningan.. nak buat bentuk bola bole.. segitiga bole.. pat sagi bole... bentuk kucing pun boleyyy...<br />

- dah siap masak hidangkan dengan sos cili dan mayonis (kalau ada)..<br />

- pastu jangan lupa kongsikan resepi ini dengan rakan2 sepejabat yang ciwi dok beli cucur kat makcik senah tepi ofis tu jer... buat sendiri je la.. ehehe<br />
